Lauki, or bottle gourd, is an incredible monsoon ingredient for snacks, dishes, and desserts. For Punjabi-style kofte, grate lauki and mix with besan and all spices. Make small balls and deep-fry. Make the gravy by cooking chopped onions, bay leaf, cloves, ginger, and garlic. Add chopped tomatoes, water, and all the spices and mix well. Add the fried koftas to the gravy and cook till they absorb the flavours. Garnish with chopped coriander leaves and enjoy.
