Here is a quick recipe for this Maharashtrian condiment. Blend pandi chilli, garlic, Kashmiri red chillies, and other ingredients in a grinder. Add ½ a cup of water for smooth grinding. The paste should have a semi-coarse texture. Heat oil in a pan and saute hing and 1-2 Kashmiri red chillies. Pour the thecha mixture and stir it for 5-8 minutes. Allow the thecha to cool off and store in an airtight container. Serve red chilli thecha as and when needed.
